I am getting an error message of invalid field in CDB. What does this mean?

I am also being told that the file is too large for the disc. 3,877,508 sectors (7,573 MB) vs. disc size of 2,298,496 sectors (4,489 MB). Is it possible that a commercial (Eric Clapton) DVD is double layer? Could that be the problem?

Yes, that's exactly the problem.

I read your guide on how to rip double layer discs and will do that if necessary. Is there any way to go from a double layer source to a single layer target? Is this even an OK idea or should I just get some double layer discs? Thanks for your help already.

Yes, it is possible, but video quality is decreased in order to achieve a smaller size.

If you want to retain the quality, you should use dual-layer media, and while you're at that, please only use Verbatim DVD+R DL media and burn at 2.4 for best results.
